Green fruity excellence in the bottle

Production

Harvested by hand in November, our early olives, mainly Aglandau and Cayon, are cold-pressed in a partner mill. This method guarantees an oil preserved from any oxidation, revealing an incomparable quality and flavors.

Extra virgin and fruity, our oil reveals herbaceous notes of asparagus and fresh grass. A light heat prolongs the tasting, bringing freshness and liveliness.

Gourmet Pairings

Perfect for enhancing salads, mozzarella tomatoes or rocket, it also accompanies oily fish and white meats with intensity and character.

Ripe fruity between sweetness and delicacy

Production

Harvested late, our black olives, mainly Bouteillan, Ribiers and Bécu from Lorgues, give an oil with sweet flavors. After harvest, the olives ferment for a few days in closed crates at controlled temperature before being pressed. This unique process guarantees a smooth and refined oil.

Sensory characteristics

Our ripe fruity oil seduces with its sweetness and roundness. It reveals smoky and woody aromas, evoking undergrowth, mushrooms, olive paste and almond, offering a beautiful aromatic complexity.

Gourmet pairings

Perfect for enhancing shellfish and lean fish such as sole or cod, it also goes well with ratatouilles, matured cheeses, and desserts, replacing butter.
